Rivertowne BBQ in Ozark, Arkansas was to be my final stop on a whirlwind barbecue road trip. To be honest, I was pretty ready to be home by this point, and some weird part of me (possibly my digestive tract) was starting to crave a few vegetables. Heresy, I know.<br />

This place looked just like I expected: a nice Main Street-style store front right near the river. It was an interesting combination of fake brick, sheet metal, wood paneling, and raw wood. Old metal signs and pig-themed decor make up the rest. Half of the dining room is a little dimly lit, and the other half is burdened by harsh track lighting.<br />

I'm not sure what part of me thought I needed an appetizer of "Possum Dumplins," but I found it impossible to resist. These are essentially pork meatballs fried in racoon fat. I overheard my waitress explain to some other interested customers that the meatballs are made from the trimmings of their ribs. Spectacular.<br />

These meatballs were, in a word, enormous. There was an interesting sweetness to them and a pleasant seasoning blend. Each bite was very juicy, although I'm not certain if that surprised me or not, since I had literally no idea what to expect from this appetizer. They came served with a creamy white barbecue sauce that was just phenomenal. Upon inquiry, I was told that it's their house barbecue sauce mixed with ranch dressing. That sounds about right. Be careful, there is cartilage in the rib trimmings, quite a bit actually. I didn't realize just how much I would enjoy these dumplins.<br />

For the non-roadkill portion of my meal, I ordered the combo dinner of brisket, pulled pork, and ribs with spicy pinto beans and potato salad on the side.<br />

Their beans were definitely spicy, but not overpowering. In my opinion they needed more salt to round things out a little better. The potato salad had a hefty dusting of paprika that didn't add much to the flavor. Crunchy, undercooked potatoes and far too much dill didn't help either. I found a few black olives in the mix for some reason, too.<br />
<br />
Rivertowne's tender pork had a moderate smokiness, but very little else. There was barely any seasoning, at least not that I could taste. No bark either, and none of the red smoky bits that I love to find. I didn't see much reason to finish my helping of pork.<br />
<br />
The brisket had a nice reddish bark and was much smokier than the pork. But, sadly, there still wasn't much in the seasoning department. The lean slices were tender and moist, so that's something I suppose. Good, not great.<br />
<br />
My ribs had a light brown crust that didn't look all that appetizing. There was a slight smoke ring beneath, which corresponded pretty well to the mild smoke level that I tasted. The ribs came with more salt than I found elsewhere on my plate, as well as hints of sugar. Here again, it's like they started off well but got stuck on second base.<br />

Interestingly enough, the only part of this meal that was above average came fried in coon fat. That's also the only part of my meal that I took home with me, so I hope my wife appreciates her souvenir.<br />

I made a last-minute itinerary change for the drive home. My original route had me going through Fayetteville, Arkansas to visit Penguin Ed's Bar-B-Que, but some additional research led me to believe that their dry brisket might be something closer akin to beef jerky. I like a good challenge and a bit of adventure, but this trip was also meant to be fun, and dried up brisket is not fun. So, I changed course and headed toward Kim's BBQ Shack outside of Branson in Kirbyville, Missouri.<br />

Kim's isn't so much a "shack" as much as it is a quaint small town restaurant. The place was full at 12:30pm, likely an after-church rush. You don't find much Sunday barbecue in small towns, so I was grateful for this one. There wasn't a ton of charm or ambiance here, but the patrons looked happy, which is all you can ask for really.<br />

It was almost certainly more food than I needed, and probably more than I was capable of consuming (the menu does say "Feeds 2-3"), but I really wanted to try their Shack Sampler. On the other hand, my cooler for leftovers was already nearly full. This time my brain persevered over my stomach, and I settled for their two-meat combo platter with pork and brisket, plus a small helping of ribs. Catfish was also a possible meat option, and although I was tempted, I stuck to the 'que. The combo comes with fries, slaw, and baked beans which was just fine by me.<br />

The slaw was bright and crisp with a light dressing that, though sweet, allowed the veggies to shine. Conversely, my fries were of the standard frozen variety. I did at least appreciate that they were hot and fried to order. The beans were above average, semi-sweet and semi-spicy. The real star amongst the side dishes was Kim's pre-buttered honey roll. Absolutely amazing. It had a crispness to it that I found reminiscent of a fresh fried doughnut.<br />
<br />
At first glance, it was hard to distinguish the beef from the pork, as both were shredded pretty finely. I eventually identified one as brisket and moved on. It was smoky, but dry and not very tender. It certainly could have used more salt, too. There wasn't much to the brisket, so I didn't feel compelled to eat much either.<br />
<br />
Their pulled pork was decidedly better. It was both smoked and seasoned nicely, and the few pieces of bark I found mixed in were even better. The pork was also juicy and tender. It had plenty of flavor without any sauce whatsoever.<br />
<br />
To be honest, the ribs didn't look that great. The light brown crust showed a high fat content to the meat, and not the tasty, well-rendered kind. The meat was at least juicy and not overcooked, so that's a plus. A moderate smokiness was also appreciated, but there wasn't much seasoning beyond the smoke. Actually, the sweet tomatoey sauce provided most of the other flavors here.<br />
<br />
If Kim's had a plate that was all pork and rolls, I'd be down for that. The rest was a little underwhelming. The place is probably closer to two-and-a-half stars, but I generally round up.<br />

I swung down through Springfield, Missouri on my return trip to Little Rock. City Butcher and Barbecue was just about the only joint open on a Sunday, so that made the choice pretty easy.<br />

Rain or no rain, I really needed to get out and stretch my legs for a bit. City Butcher did an awesome job of carrying the butcher block theme throughout, which should make anyone hungry if they weren't already. If you were looking for frills, you won't find too many here. Butcher paper and tape are all you get as far as "to go containers." Good thing I packed plenty of tupperware for the trip.<br />

They do all of their stuff meat market style, selling barbecue by weight in any increment you desire. I asked for a small sampling of brisket, pork belly, burnt ends, pulled pork, and ribs, plus a half-link of their Austin Andouille sausage. Considering the size of my order, these guys generously tossed in a sample of their smoked turkey as well. Fantastic! Sides seemed pretty unnecessary at that point, so I figured I'd just focus on my pound-and-a-half or so of meat.<br />

The dark, gorgeous brisket crust was covered in more coarse black pepper than I thought possible. It gave the beef a great flavor, as you might expect. Each bite of the brisket was oh so tender, and I thoroughly enjoyed the well-rendered layer of fat. The smoke ring was small though still visible, and despite its size there was a potent smoke level. I'll take that trade off any day of the week.<br />

Big slices of pork belly were deceiving at first and looked more like pork loin. They might as well have been slices of smoky peppered butter considering how fast they melted in my mouth. The pork belly was decadent and rich, to say the least. Of all of my meat samples, this was the only one that was too phenomenal to save for leftovers. I doubt my microwave would have done it justice anyway.<br />
<br />
Their coarse ground sausages are clearly made in house. It had the slight spiciness that you'd expect from andouille, while the smokiness exceeded all expectations. Snappy casings did a great job of holding onto the juicy meat inside. Overall, very tasty.<br />
<br />
My burnt ends came out as big hunks of peppered beef. Unlike the brisket, these had a deep rosy smoke ring. And despite their thickness, each bite was very tender and moist. I don't eat burnt ends all that often, but when I do I want it to be a real treat, and these did not disappoint.<br />
<br />
As I had come to anticipate at this point, the complimentary turkey was coated in beaucoups of black pepper. It was also moist and very juicy. I wasn't expecting that from poultry, in all honesty. As it turns out, they turkey ended up being one of the most tender meats on my plate, and it had a nice smoky flavor to boot.<br />
<br />
The pulled pork had plenty of bark to go around, and plenty of smoke, too. I enjoyed the natural pork flavors, but the seasoning made things extra savory. The meat was also very tender, which always helps. I could have happily eaten a pound of this stuff.<br />
<br />
Last but not least came the ribs. The crust was pretty much jet black, with a prominent smoke ring beneath. While copious amounts of pepper tied them to the rest of my plate nicely, a sweet glaze really set these ribs apart. The meat was cooked perfectly and came away cleanly from the bone with each bite. My only regret was that there were only two of them.<br />

Calling City Butcher and Barbecue good would be a vast understatement. Every single thing on my plate was absolutely spectacular, even if I had to pick copious amounts of black pepper from my teeth on the way out the door.<br />

Since I made awesome time driving today, and since there was no point in just lounging around my hotel room alone, I figured I might as well add another Kansas City barbecue stop to my trip. I had originally wanted to try Slap's, but they close at 9:00pm, and my dinner at Joe's Kansas City took waaaayyyy longer than anticipated. Jack Stack Barbecue was open until 10:30pm, and because they seemed to be a formidable competitor as well, I decided to give their Freight House location a shot to close off my night.<br />

My options were either an hour weight for a table or immediate seating at the bar. Easy choice, especially considering the line that I had just endured. Jack Stack offers more of an upscale, intimate restaurant setting, so I understand the wait for Saturday dinner. It's a nice place, no question about that. Most barbecue joints that I frequent have paper towels and sweet tea, not cloth napkins and a full wine list. Ironically, the annoying drunk who plopped down next to me could have definitely used more tea and less wine.<br />

It didn't take much convincing for me to settle on the aptly-named Kansas City Combo. I took mine with brisket (which they list as "sliced meat" for some reason), sausage burnt ends (the other options were beef and pork), and spare ribs, plus some potato salad and a cheesy corn bake on the side. Everything but the side dishes came pre-sauced. At a fancy restaurant, I probably should have guessed as much.<br />

Truth be told, I was a bit perplexed by the cheesy corn. It looked like a bowl of cheese dip. So then what did it taste like, you ask? A bowl of cheese dip...with corn inside. The corn wasn't necessarily bad, just odd. My intoxicated neighbor seemed to love the stuff, which says something I suppose. The potato salad was heavy on the mayo, but nice big slices of skin-on potatoes and crunchy veggies added a good texture contrast.<br />
<br />
Again with the thin-sliced brisket? That must be a Kansas thing. What little bark there was to be had was salty and smoky, something I always appreciate. Lean slices aren't my preference in general. These were fairly tender but not as juicy as my preferred fatty cut would have likely been.<br />
<br />
I'm not sure how the sausage "burn ends" really differ from regular sausage, but it was tasty at least. The slices appear to have been finished on the grill, so I guess that's what they meant. Crisp, snappy casings held juicy meat beneath. Each bite was packed with plenty of seasoning. Burnt ends or not, I enjoyed the sausage.<br />

The crust on my ribs looked amazing. As it turns out, however, the ribs actually weren't as well-seasoned as they looked, but still good nonetheless. I tried to sample as much sauceless rib as I could. Juicy, smoky pork oozed from my mouth with each bite. The fat was crispy and well rendered, which made the ribs a real pleasure to eat. <br />
<br />
Jack Stack Barbecue has some work to do if they're going to hang with the rest of the KC masters, but they did put out some better-than-average barbecue. Maybe they would be well served to focus less on the ambiance and more on the meat.<br />

It may be touristy, but Joe's Kansas City Bar-B-Que is one of the big names in smoked meat. In fact, Anthony Bourdain, R.I.P., listed it as one of thirteen places to eat before you die. This famous joint has youthful new rivals on both the KC and MO sides, such as Q39 and Slap's, but I came to Kansas City for Joe's.<br />

Their original "gas station" location actually does still have
functional gas pumps, although I'm sure that barbecue is the bigger draw. I
anticipated a line for Saturday dinner hours, but not to the degree
that I found. At 6:30pm, there were easily sixty people between me and
the front door. After twenty minutes, I called Joe's from the outside
just to see what the wait time would be on a to-go order. Even that
would have been another forty-five minutes, so I figured I might as well
stick to the plan and dine in. Around 7:15pm I finally made it indoors,
where I waited another forty-five minutes before even ordering. Geez, I
hoped this place would live up to the hype.<br />

While in line, I noticed an advertised special called the "Hogamaniac Dinner." Pulled pork, sausage, two ribs, and two sides. I briefly considered this porky combo, but people don't come to Joe's for the sausage. They come for the ribs and The Z-Man sandwich, so that's what I did. I grabbed a half-slab dinner with Kansas caviar and a Z-Man on the side.<br />

If you're like me, you have no idea what "Kansas caviar" is. Well, best I could tell, it's a colorful mix of edamame, corn, shredded carrots, roasted red peppers, and pickled onions with some sort of a sweet, lime vinaigrette. In short, the caviar was crisp and vibrant. I absolutely loved the pickled onion, which is where most of the flavor came from. This side dish would have been perfect served alongside a big bag of tortilla chips.<br />
<br />
My ribs looked amazing, to say the least. They had a beautiful dark red crust and a very evident smoke ring. There was also plenty of visible seasoning, so I knew that I was in for a treat. I tasted a great saltiness with hints of pepper, which is what I would describe as "competition-style" seasoning. The ribs were tender, juicy, wonderfully smoky, and excellently cooked. I don't have one single negative thing to say about them.<br />
<br />
The Z-Man has a mysterious, nondescript name, but don't let that scare you away. This bad boy is piled high with brisket, melted provolone cheese, and two crispy onion rings on a Kaiser bun. Yum! The super crunchy onion rings were a perfect compliment to the savory, smoky brisket, and the cheese just tied it all together perfectly. The brisket itself was very tender, particularly in its thin-sliced form. I'm not normally a fan of barbecue sauce, especially with my beef, but Joe's semi-sweet sauce worked well here.<br />
<br />
Was Joe's Kansas City Bar-B-Que the best I've ever eaten? No, to be blunt. But it was extremely good and probably worth the hour-and-a-half wait.<br />
<br />
UPDATE (September 13, 2018): I found myself perusing Joe's website, and I stumbled across a new sandwich: The Rocket Pig. This hunk of deliciousness comes with pulled pork, bacon, fried jalapenos, pepper jack cheese, and a sweet-hot barbecue sauce. If I'm ever back in Kansas City, I'll definitely have to do a little compare and contrast with The Rocket Pig versus The Z-Man. I can't wait! <br />

BobbyD's Merchant St. BBQ was a last-minute addition to the itinerary for Day Two of my fabulous barbecue roadtrip. I was already passing through Emporia, Kansas, and my next planned stop was open until 10:00pm, so there really wasn't any harm in it.<br />

Inside, it's a much different feel than the diminutive storefront would let on. I expected a cramped deli-type place. Nope. The main dining room is a decent size, with more of a small town diner feel to it. Most of the decor is centered around the Old West and Barney Fife, while the menu and website feature a hip pig in baggy jeans and sunglasses. I'm not sure why, but it is what it is.<br />

This joint has a "Meat Trio +1" menu item that's described as "a healthy sampling of smoked meats." Perfect, just what I wanted. As its name implies, the combo comes with your choice of three meats plus one rib. I picked brisket, burnt ends, and pulled pork as my three, plus cheesy potatoes as my one side dish. After all, it's apparently their house specialty.<br />

I received a large scoop of shredded potatoes. Truth be told, they don't look like much, but they were definitely cheesy and definitely delicious. House specialty, indeed.<br />

The brisket came sliced razor thin, with only a slight smoke ring and no bark. I tasted a mild smokiness, as well as some surprisingly sweet undertones. What fat there was hadn't really been rendered much at all. Nonetheless, the brisket was tasty in its own right, even if it was better suited for a hoagie sandwich.<br />
<br />
Next up was the pulled pork, which was tender but had about as much smoke as the brisket. No bark here either, and it could have used more salt. That being said, the pork was nice and juicy, there just wasn't a lot to it.<br />
<br />
The burnt ends weren't so much burnt ends as much as they were shredded hunks of the fatty brisket that my slices should have been. I tasted the same sweet sauce here, too. There was some evidence of a smoke ring, and a moderate smoky flavor. At least their smoke level is consistent across the board, so that's something to be proud of I suppose. The meat was decently tasty, but I wasn't too partial to the sugary glaze.<br />
<br />
My one rib turned out to be two, which I was able to completely pull apart by hand. They were tough, sort of dry, and definitely overcooked. Weirdly enough, the charred crust left a burned taste in my mouth, rather than the normal pit flavor that I know and love. I think somebody needs to clean the smoker better.<br />
<br />
BobbyD's Merchant St. BBQ was ok, and they certainly do some things well, just not enough of them to be more than average. This place is probably closer to a two and a half, but since I don't do half-star ratings, I'll call it a three and move on. After all, I did show up mid-afternoon, and at its peak freshness the barbecue there might be better anyway.<br />

My original plan for Wichita was to stop at Bite Me BBQ, which was supposed to have some of the best 'que in that part of Kansas. But then I pulled up their website and was aghast at the prominent "fine print" rules: <br />

- No unattended kids at the condiment table.<br />
- If you ask for extra of something you'll be charged extra.<br />
- No ordering off of the catering menu for dine-in customers.<br />
- If you get a catering order you can't eat any of it inside the restaurant.<br />
- $2.00 upcharge to share a plate with someone.<br />
- Menu prices may be changed without notice.<br />

All of these strict, librarian-esque rules were a real turnoff, even though none of them applied to me today. Barbecue is supposed to embody a relaxed "low and slow" attitude, and relaxed this place is not. So forget that crap, I decided to try my luck at the nearby Pig In! Pig Out! BBQ instead.<br />

This joint is a little skimpy in the decor department, unless you count awards, in which case they're loaded up. Pig In! Pig Out! is altogether quiet and unassuming, with few frills of any kind. The lunch run had long since ended, so I pretty much had the place to myself. But I actually appreciated the peacefulness of it after being on the road for a few hours. <br />

I ordered up a 4 Meat Sampler Dinner to try as much of their food as possible. Brisket, pulled pork, hot links, and ribs would do nicely for the meats, and I picked pasta salad and peach cobbler as my two sides. Dessert for a side? Because I could, that's why.<br />

The pasta salad was fairly heavy on the mayo, to the extent that I couldn't really taste much else. Tri-color rotini pasta was a nice choice though, as were the black olives.<br />

My brisket didn't look all that spectacular, with the bark pretty well removed. The thick, lean slices crumbled at each prod, but upon closer inspection they weren't really overcooked, so I'm not sure what the issue was exactly. I found the beef to be pleasantly smoky and rather tender, it just wasn't my style, as I prefer fatty bark-laden brisket.<br />
<br />
Conversely, the pork looked much more inviting than the brisket, and it was tastier, too. There were certainly plenty of smoke-colored pieces to go around, although not much bark here either. Most of the pork was tender and juicy, but a few bites were drier than others. I tasted a moderate amount of smoke and little seasoning other than some salt, which was just fine by me.<br />
<br />
The hot link's red casing matched its fiery interior perfectly. The casing was crisp with a good snap, and the coarse-ground meat inside had plenty of pepper throughout. I didn't purchase a drink to go with my meal, but the heat level at play here made me wish that I had. To be honest, I couldn't taste much more than heat, though perhaps that's the point of a hot link.<br />
<br />
While the rest of my plate ranged from passable to mediocre, the ribs were really, really good. The salt and spices of the crust hit me right away, followed by a lingering smokiness. Juicy and succulent pork came away cleanly from the bone with each bite. The smoke ring didn't extend much below the crust, but I'll take flavor over appearance any day.<br />
<br />
The cobbler was a bit doughy and chewy for my liking. On the plus side, the peaches were nice and sweet, and I always love the combination of fruit and brown sugar. I think some more cinnamon would have been nice though, as would a crunchy streusel topping.<br />
<br />
Your best bet at Pig In! Pig Out! BBQ is to just get a rack of ribs and be done with it.<br />

Apparently Burn Co. Barbeque is pretty popular amongst Tulsa locals and tourists alike. When I pulled up at 10:00am, a full half-hour before opening time, there were already a handful of hungry people waiting by the door. That line grew to over three dozen by 10:30am. It's not the kind of crowd you'd expect for Franklin's in Austin, but impressive nonetheless. I'd have been closer to the front if six people hadn't cut their way into "saved spots." Grrr!<br />

I absolutely loved the vibe here. Their huge barbecue-themed murals were awesome and appropriate. Smoke filled the air like someone had just shut off a fog machine. Fun music and enthusiastic employees also added to the ambiance. If you're in the mood to cook your own food instead, Burn Co. has a meat counter full of fresh cut steaks, sausages, jerky, and more. In short, this place was entirely excellent.<br />

There was one menu item that I knew would be part of my meal, regardless of what else I ordered: The Fatty. Bacon wrapped around ground sausage wrapped around ground-up hot links wrapped around more ground sausage wrapped around a smoked sausage link. It's like some glorious pork-filled barbecue turducken. As filling as that sounds on its own, you can also get The Fatty as part of an off-menu "Happy Plate." This three-pound plate of deliciousness will run you over $40.00, but you get to sample all of their meats: brisket, pulled pork, smoked bologna, chicken, ribs, several kinds of sausage, and of course The Fatty. How could I possibly resist??? If that isn't enough, you also get two sides, so I snagged a little mac and cheese and grilled potato salad. Their gluttonous platter also comes with two drinks, so clearly it's meant to share, but I just took that as an opportunity to double-fist some strawberry Fanta.<br />

Grilled potato salad sounded pretty unique, and in fact it was. I found hunks of grilled peppers and onions laced throughout the crispy homefry-style potatoes. That alone was good enough, but then lo and behold, bacon! It was more akin to a breakfast hash, but scrumptious either way. The mac and cheese was piled high with big, creamy shell pasta. And what did I find underneath? More bacon. I liked this place a lot.<br />
<br />
Burn Co.'s brisket comes chopped, not sliced, and it also comes pre-sauced. But despite my preconceptions, it was super good. There was a slight spiciness and a definite smokiness. Crisp bark was intermixed in each bite of the incredibly tender beef. Even in its chopped form you could still see the smoke ring.<br />
<br />
The chicken drumstick was almost black and oozed smoke, a rarity for barbecue chicken. Crisp skin on top and juicy meat beneath was a perfect combination, and each part was seasoned very nicely. I did notice some hints of sweetness on the skin that were particularly enjoyable.<br />
<br />
My giant heap of pulled pork was very moist and carried a great smoke level. There was also smoke-kissed bark throughout, which made things extra savory and added a crunchy texture to the tender meat. There was no sauce on the pork, and it definitely didn't need any. I had to force myself to stop eating it.<br />
<br />
There were two kinds of sausage on my plate: a regular variety and their spicy "lava link." The plain sausage was a coarse-ground homemade link, full of black pepper and full of flavor. The casings popped with each bite, and that's something I always appreciate. The hot link was good too, although I preferred its companion. My first bite of the spicy sausage wasn't too bad, giving me a false sense of security. The second bite, however, lingered in the back of my throat for several minutes, making me tear up a little.<br />
<br />
The meat on my pork ribs went up a solid inch above the bone, if not more. There was a beautiful rosy crust covered in a great peppery rub. The meat was very juicy and packed tons of smoke. Neither under nor overcooked, these Goldilocks ribs were just right.<br />
<br />
Bologna, aka Oklahoma prime rib, isn't one of my usual barbecue selections. But when it's done well, it's superb. And this bologna, my friends, was done very well. I found it surprisingly smoky with a crisp, nicely charred skin. Unlike most other meats which mostly retain their own natural flavors, the bologna had soaked up all of the gloriousness that the pit had to offer.<br />
<br />
Finally, it was time for the coup de grace: The Fatty. Most of the main flavors at work were similar to a semi-spicy breakfast sausage. There was also a touch of barbecue sauce here and there that jazzed things up nicely, and there was plenty of smoke to go around. The Fatty was definitely an interesting addition to my lunch, though more of a novelty than something I'd order regularly. Either way, I'm glad that I ate it.<br />
<br />
In the end, I needed three big to-go containers to house all of my Burn Co. Barbecue leftovers, which I joyfully looked forward to finishing in the coming week.<br />

Dallas was a great home to my wife and I for many years, and while I'm always ready for a nostalgic visit, I don't have the slightest desire to fight its horrendous traffic anymore. A barbecue joint called Sideways opened up shop a few months ago on the East side of Lake Ray Hubbard, and since eating there meant that I could bypass most of the gridlock, it didn't take much convincing to make this my scheduled DFW dinner run.<br />

Sideways has the fun atmosphere that you'd expect from a harbor restaurant. They have a nice bar area, big screen TVs, and a huge outdoor patio. But since it was 100 degrees even with full cloud cover, I took a seat in the air conditioning. There was sort of an upscale rustic motif going on here with a splash of farmhouse sheik, which I liked it, and considering how busy they were, so did everyone else. A small stage area for live music was being set up, but I would likely be gone by the time that got rocking.<br />

I ordered myself a 3 Meat Plate of brisket, pork ribs, and pulled pork. Upon selecting brisket, the waitress immediately asked for my preference of fatty or lean. Now that's my kind of place! Naturally I picked the fatty beef, but I'm sure their lean cut is good, too. I also made sure to snag some of their baked hatch chili mac and cheese as my one side dish. Oh, hatch chilies, how I've missed you.<br />

Large shell pasta was a welcome change from basic elbow macaroni. The mac was creamy and cheesy, with a nice bite from the peppers. Cheese and spice complimented each other nicely. This was a really enjoyable side dish, and I made sure to take some leftovers with me so that I could enjoy it again.<br />
<br />
The brisket had a deep black crust with a small red smoke ring beneath. Its big fatty layer along the bottom could have stood a wee bit more rendering, but it tasted great and melted in my mouth. A good amount of salt and black pepper in each bite was all the seasoning this needed. The thick slices were very smoky and not the slightest bit dry.<br />
<br />
Their pork had the appearance and taste of meat that's been tossed in sauce. At least it was a vinegary one rather than the overly sweet variety. I caught hints of spiciness here and there, as well as a nice smoke level. The pork was sufficiently tender and juicy, though not really the pulled pork I had wanted.<br />
<br />
My ribs looked fantastic! Coarse black pepper coated the ruby red crust, which extended deep below the surface. They were super moist, incredibly juicy, and wonderfully smoky. The meat stayed put until each successive bite, but then pulled off the bone with little more than a slight tug. In short, they were cooked perfectly.<br />
<br />
If the pulled pork had been up to snuff, and the brisket slightly better, Sideways would certainly be a five-star barbecue joint. But even as is, this place is worth a visit.<br />

My darling wife persuaded me to add another day to my planned barbecue roadtrip, and who am I to turn that down? The parking lot was a veritable ghost town at 4:00pm. I wasn't even sure that Scholl Bros. was open for business, especially since their neon sign was off. But, needing a break from the road, I checked anyway. Good thing that I did. This joint screams "small town," from the rustic tin ceiling to the deer heads scattered about. More so than many places I've visited, I felt at home here.<br />

Scholl's offers a four-meat/no sides sampler plate for just $18.00. You can get a version of this magnificent platter with three side dishes for a mere $2.00 more, but I was feeling carnivorous today. I took my meaty combo with brisket, ribs, pulled pork, and sausage. The guy generously threw in a free drink since I bought a solid pound of meat.<br />

I received lean slices of brisket, but there was still a good line of fat to be had. There was also a perfect rosy smoke ring, matched by a mild smokiness. Their brisket is seasoned with just the right amount of salt and pepper, which allowed the natural beefiness to shine equally alongside the smoke.<br />

Beautiful smoke-kissed bits and a well-seasoned layer of charred bark stood front and center in my pile of pork. It was tender and nicely smoked. In fact, the pork was noticeably smokier than the brisket. I wouldn't have dreamed of adding sauce, and it certainly didn't need any.<br />
<br />
Scholl's sausage didn't strike me as being homemade, which is always a shame, especially from small town barbecue. The crisp casing had a great snap. I could only taste minimal smoke, but that's to be expected with sausage generally, especially the store-bought stuff.<br />
<br />
The ribs came out lightly sauced. They also came with the membrane still intact, so I had to work a little bit to avoid that. I easily pulled the meat completely off with my fingers. Either the ribs were cooked too long or they sat under the warming lights too long, I'm not sure which. The sauce was too sweet for my liking, particularly for Texas barbecue.<br />

A few other hungry folks showed up by the time I climbed back into my truck. Scholl Bros. Bar-B-Que probably does very well in Paris, but they need a little work to really hang with the big boys.<br />

Fatboys Killer Bar-B-Q is one of those barbecue joints that pretty much requires an intentional trip. You're not likely to just stop by there on a whim unless you live or work in the general vicinity. The only time I've been out that way before was to pick up some maple and poplar for a woodworking project. But today, I came for the 'que.<br />

I found Fatboys housed in a small retail strip, with an auto parts store seeming to be the main attraction. Peach-colored curtains were fully drawn across the big copper-tinted windows, giving it the appearance of a shady "massage parlor." Despite the "open" sign in the window, I was a little unsure that they were actually open for business, but I tried anyway and found the door unlocked.<br />
<br />
Inside, it's a much different ballgame. Fatboys is decorated with more knickknacks than I figured you could squeeze into a small room. They also devote a fair amount of space to their various barbecue competition trophies and awards. Some other reviewers have described the place as having a biker bar feel to it, but if the term "good old boy" means anything to you, that's probably more accurate.<br />

The menu here is a pretty standard array of sandwiches and platters. I'm glad I inquired further, because Fatboys does offer an off-menu combo plate that gets you a couple of ribs and another meat of your choice. Naturally, I took some sliced brisket to go with my ribs, as well as their "tator salad" and "Maxine and cheese" for my two sides.<br />

My potato salad was mayo-based and came with plenty of spud skins. It was rich and creamy, and I enjoyed it more than a lot of other potato salads that I've come across, which tend to be too heavy on the mustard for my liking. The macaroni and cheese, on the other hand, was pretty basic. It was thoroughly cheesed, but lacked anything meaningful.<br />

I could immediately tell that the brisket and I would not be friends. The thick slices crumbled apart with very little effort. They were also really dry and a little tough to chew. I tasted a slight smokiness but barely any salt or other spices. The bark wasn't very bark-ish, although it did contain more smoke than the rest of the slice, so that was a plus I suppose.<br />

The small-bone ribs didn't look all that appetizing either. They were a little juicier than the brisket but still on the dry side. Not much smoke to be found here either, and about as much seasoning. I could see the dry rub sprinkled on the crust, such as it was, but I couldn't taste it.<br />

Fatboys Killer Bar-B-Q ended up disappointing me on several fronts. My suspicion is that their barbecue hangs out in warming trays for quite a while after it comes off of the pit, or possibly even gets reheated. I can't say for certain, but that's my working theory. The staff here was very friendly, and that's when it always pains me to write a negative review, especially for a small business. But sadly, Fatboys just isn't that good.<br />

As you might expect, seafood is by far the main draw in and around Destin, Florida. But there is some good barbecue to be found in that area as well, and my favorite spot has been Buck's Smokehouse. Sadly, as we rolled into town for our annual family vacation, my eyes became a little teary at seeing that Buck's was no more. In its place now stands the sixty-second location of Moe's Original Bar-B-Que. I have a general disdain for chain barbecue, and in my experience it's rarely more than mediocre. That said, I haven't tried Moe's before, and I'm always willing to give a barbecue joint a fair shake, no matter how big or how small.<br />

We asked the girl at the counter what happened to Buck's, since this appeared to be a fairly recent change. She looked a little hesitant to answer, and simply said, "Buck decided that he didn't want to have a restaurant anymore. He's been trying to sell it for a while." I'm not sure that I completely buy that explanation, but it is what it is. Everything here is nearly identical to Buck's, except the name and the menu. I took a picture for posterity's sake, although I probably didn't need to.<br />

Moe's has no multi-meat combos to offer, not even on their large family packs. They also don't serve brisket. This wasn't my first rodeo with that sort of menu, and unfortunately it probably won't be my last. I ended up going with a pulled pork platter and adding two a la carte ribs and three wings to the mix, plus potato salad and fried green tomatoes as my two sides.<br />

The potato salad was kind of a mashed potato type, but it did have a nice crunchy texture throughout from all of the veggies. I also liked the red onion. There was plenty of mustard to go around without being overpowering. My two big fried green tomatoes came topped with pickled red onions and some sort of remoulade. The crispy batter and tangy tomatoes were a nice compliment, but truth be told, the pickled onions had much more flavor than the tomatoes.<br />
<br />
I had requested sauce on the side of my pulled pork, but that apparently went ignored. I found some pieces with no sauce, and they were fairly bland and a little dry. There also wasn't much smoke that I could pinpoint, and not much seasoning either. The sauce seemed like the main flavor component here, which is just sad. Even though I did enjoy their semi-sweet barbecue sauce, it wasn't enough to salvage things.<br />
<br />
My wings had a super crisp skin with a nice char as well. There was a lot of seasoning and a slight spiciness in each bite of the tender, smoky chicken. I really, really liked these, and I wish that I had gotten more than just three, especially given the disappointing pork, most of which stayed put on my plate.<br />
<br />
The ribs came with a drizzle of the same sauce as on the pork, and it appeared to be the main source of flavor here as well. The overcooked pork ribs were somewhere between a baby back and a KC spare rib in terms of size. I found them dry and a little chewy, with only a moderate smokiness. There also wasn't any real crust to speak of.<br />

I also snagged a kids smoked turkey plate for my little buddy, with macaroni on the side. His mac was of the basic elbow variety, with cheese that was sort of half melted, half not. As my wife put it, "There are some greasy, crusty parts." Pretty much it in a nutshell. The side of cornbread was really tasty, but why you would put jalape<span style="font-family: inherit;"><span style="font-family: inherit;"><span style="font-size: small;"><span style="line-height: 107%;">ñ</span></span></span></span>o cornbread on a kids plate is beyond me. My son couldn't spit it out fast enough. Gee, thanks. His turkey was decently smoky and pretty tender. It was also seasoned well, so I suppose that's some consolation.<br />

All the same, and very mild. Couldn't put it better myself. Buck's Smokehouse was really spectacular, especially their mouth-watering brisket. Moe's Original Bar-B-Que, in contrast, was just average. I guess when you have sixty-two locations, "just average" is enough to turn a profit, so why waste your energy doing better? And that's why I loathe chain barbecue.<br />

A long-standing Little Rock barbecue institution, Casey's Bar-B-Que, re-opened its doors in a brand-new location just a few weeks ago. Of course, I had to go investigate and see if all of the hype was justified.<br />

Casey's closed up shop in 2005 after twenty-two impressive years in business. I'm not sure of the exact reason for the closure, but, needless to say, many Little Rock residents are plum tickled to see them back in business. I've awaited their opening for a while now, which got delayed because of permit issues and other unfortunate events. With newness comes long lines, and in order to avoid such, I arrived promptly at their 11:00am opening time.<br />

The new location is in the home of the former Arkansas Burger Company, but Casey's doesn't feel like a burger joint whatsoever. It actually has kind of an indoor-outdoor vibe with all of the brick and white shiplap. I liked the exposed beams, too. The place is clean, welcoming, and open, with wall-length windows making the place feel even larger. Casey's has a nice patio space out back, even if it is a tad small. They also made good use of the existing drive-thru on the building, which I'm sure will get a ton of traffic.<br />

At Casey's, just order at the counter and plop yourself down anywhere you like. I got their regular combo plate with sliced brisket and pulled pork, plus potato salad and bbq beans on the side. There is a large combo plate available, but apparently it just comes with an extra side, not an extra meat. So I stuck with the regular size and added on a half-pound of pork ribs to round things out. After all, I wanted to get the full Casey's experience. Service was fairly slow, even though I was only the third table through the door. I had my food in about fifteen minutes. Hopefully that's just some growing pains while the new employees figure out a rhythm.<br />

The potato salad had a pleasant amount of mustard. It was also very tangy, with a good crunch from the veggie mix-ins. I found big hunks of meat scattered throughout my beans. They were very sweet, and only slightly peppery despite all of the visible black pepper.<br />

My requested slices of brisket came out chopped. Maybe the cashier misheard me. The beef was a little chewy, though not dry. Casey's super-vinegary barbecue sauce was definitely front and center here. I could taste some good smoke through the sauce, which surprised me. It was difficult to find things like a crust or a smoke ring in this form, but at least the flavors were on point.<br />
<br />
The pulled pork, although a little less smoky than the brisket, was very tender. I received a few pieces of bark in my helping, which were well-seasoned. With all of the sauce, the pork tasted pretty much the same as the beef, just a different texture. I'm not suggesting that this was a bad thing, it just wasn't unique enough to detail further.<br />
<br />
Despite placing a dine-in order, the ribs arrived in their own carry-out container because "they're very messy." Yes, I would agree. The ribs were swimming in a literal pool of sauce that rose about halfway up each bone. My half-pound order amounted to four ribs, which was probably more than plenty. I found a deep reddish crust and juicy pork beneath. The meat came off with ease, but did manage to stay put until I was ready for the next bite. A heavy dusting of spices coated the ribs on all sides. The sauce probably paired best with the ribs, since it simply coated them and rolled off instead of soaking in.<br />

If you're going to grab a two-meat combo here, go for the ribs and pulled pork, since the beef/pork combo ended up being a little superfluous. I'm glad that Casey's Bar-B-Que is back in action, and I wish them well. My in-laws want to try out their new 'que as well, so I'll probably be eating there again in a few days!<br />

UPDATE (May 19, 2018): As predicted, we grabbed a Casey's to go order for our family dinner on Saturday. I went with a family pack (of course) with a pound of pulled pork and sides of bbq beans and potato salad. For my kiddo, I also ordered some of their smoked turkey. I had initially wanted an additional side of mac and cheese, but since they were out, a few orders of their spiral cut fries had to suffice. The sauceless pork was even tastier than before, at least to me, since I prefer my meat <i>au naturel</i>. The real winner, however, was the turkey. Our slices had just come off of the smoker, so they were as fresh as could be. It was exceedingly smoky and really, really tender. In my opinion, if you like the smoked turkey from nearby Burge's, this was at least twice as good.<br />

I managed to take my family on a bit of a wild goose chase out to Oceanside, California for some barbecue. We came to San Diego for a week-long vacation, and I picked Felix's BBQ with Soul as my one customary barbecue indulgence. Felix's has more of a casual, bistro-esque interior than I was anticipating. It was comfortable and clean, without much decoration to speak of really. Some cool blues music might have been a better choice for ambiance than the old crooners, but that's a personal opinion. Either way, it was still pleasant.<br />

The tomatoes had a well-seasoned batter, and their tartness paired well with the zesty remoulade accompaniment. That said, they were kind of falling apart at the seams, which made them fairly difficult to eat.<br />

I initially had my eye on sharing a four-meat, four-side sampler platter, but the wife was more interested in chicken tenders for some unholy reason. Without her to help eat at least a little of my meat, I settled on a custom two-meat combo of tri-tip and St. Louis ribs with macaroni and sweet potato fries. When eating barbecue in California, tri-tip is pretty much a given.<br />

Our complimentary cornbread was slightly sweet and not the least bit dry. Big elbow pasta was a good choice for the macaroni. The cheese was a little grainy, though still very gooey and tasty. My fries were sufficient, but nothing special at all.<br />

The tri-tip was a little chewy, but not dry. It was an interesting texture. The fattier slices were more tender, and their fat was also nicely rendered. I found a moderate smokiness without the usual smoke ring. The crust, though seasoned well, didn't really add that much to the flavor profile. All in all, I liked it just fine.<br />

Both the tri-tip and the ribs were served over lettuce for some bizarre reason. My ribs were big and meaty, but St. Louis ribs they were not, since the rib tips, etc. were all still attached. I appreciated the deep red crust. The meat came off with zero effort, a touch overcooked. Their honey glaze was fairly sweet, while the peppery rub was a good contrast. A third-rack was as many ribs as I needed today.<br />

Felix's BBQ with Soul was a little hit or miss. It was also pretty expensive. Besides my custom order, we had the tomato appetizer, an order of chicken tenders, and a kids PB&J. All of that, with tax and tip, ran an astonishing $80.00! The food was ok, but certainly not worth that much. While I'm grateful to my wife for indulging my hobby, I wish that I had picked someplace else.<br />

There wasn't much specific info about what to expect from this event aside from the obvious cook-off part. I knew there were supposed to be food trucks, but which ones in particular I'd just have to wait and see. The amateur barbecue cook-off benefits the American Cancer Society of Central Arkansas, with competitors simply taking home bragging rights and the inherent satisfaction of philanthropy, since 100% of the proceeds go to the local ACS chapter.<br />

Well, having Disney on Ice only a half-mile down the street made getting to this event a freaking princess-filled nightmare. Once my son and I arrived, there were no food trucks anywhere, and nothing really for kids to do despite the advertised "family friendly" nature of the cook-off. Great, just great. Luckily, I've been doing the dad thing long enough to have packed some chicken, cheese, and applesauce for my little guy just in case, so he ate his lunch in the stroller as we walked up and down Main Street.<br />

Then, by the grace of the barbecue gods, the "People's Choice" sampling started up at 11:30am instead of the scheduled noon time. Not one to look a gift horse in the mouth, we went in for twenty minutes, and I shoved as much meat in my gullet as my toddler would allow. I found quite the motley assortment of barbecue, as well as other things approximating barbecue.<br />
<br />
Boston butt "nuggets" and pork tenderloin were both a tad dry. I got some jambalaya that was very tasty but seemed out of place in this setting. The brisket was juicy, though a little too much like pot roast for my liking. The pulled pork egg rolls were awesome and had an excellent flaky wrapper. I wish I had also tried the kind with coleslaw for some added crunch. Bologna and sausage were both seasoned well, and I thoroughly enjoyed the smoked cheese. I also found room for some sweet peppers stuffed with cream cheese and Italian sausage. The pork belly really hit the spot, as it always does. Nicely charred bacon-wrapped watermelon rind was one of my definite favorites, but in the end I gave my "People's Choice" token to the Blind Mullets team for their spicy smoked chicken wings with Alabama white sauce. They had a magnificently crispy skin, blackened nicely from the pit, and the creamy white sauce tempered the heat nicely. Superb.<br />

I sincerely apologize for the lack of food pictures in this post, but once the sampling kicked off my fingers were too full of meat grease and toddler spit to risk handling my phone. Getting outside and spending the day with my son is always worthwhile, I'm just sorry that it was so much of a struggle this time. It wasn't until the very end of our morning that things seemed to start going according to plan, although I suppose that's often what makes an adventure worthwhile.<br />

I needed a little bit of a break today, so I thought I might treat myself to some smoked meat therapy. Jo-Jo's Bar-B-Q up in Sherwood, AR opens their doors early at 10:30am, which made it perfect for my schedule this morning.<br />

It's a pretty simple setup they've got going on here. Jo-Jo's occupies half of an older slant-roof building, with some sort of salon sharing the rest of the space. The joint looks about like you'd expect from a small town diner, unassuming both inside and out. Clearly not the place to go for ambiance, but then again most folks who come here probably couldn't care less.<br />

Even though my waitress was obviously a new employee, she was very sweet and seemed to be a fast learner. I asked for a custom two-meat combo plate, but luckily for me they actually had a three-meat ribs/brisket/pork sampler on special, complete with beans and coleslaw. Sold!<br />

The beans were nicely peppered and pleasantly acidic. I found a good crunch of onion, not to mention a spiciness that hit my tongue now and again. Not being the biggest coleslaw fan in general, I appreciated that they went a little easy on the dressing. The slaw was tasty enough for those who enjoy it, and fresh cabbage and carrots added a crisp texture.<br />
<br />
My brisket came out chopped, even though I was told beforehand to expect slices. The waitress asked if I wanted to send it back for sliced brisket, and even though I did, I told her that it was fine as is. The brisket was loaded up with delicious, salty bark. I also noticed a decent smoke level in each bite. I couldn't see a smoke ring, but I'd rather taste smoke than see it. The beef was very tender, which you would certainly expect in its chopped form, so I can't speak to the tenderness of their sliced brisket.<br />
<br />
The pork was also served chopped, but here I could see some pink smoke-kissed bits mixed in. Most of the pork struck me as sufficiently smoky, and I found it to be both moist and juicy. Although I didn't receive a ton of bark in my portion, what little there was I enjoyed immensely. Some well-rendered fat was a nice addition, too.<br />
<br />
A deep reddish-black crust made me salivate at the sight of Jo-Jo's ribs. They were visibly smoky, to say the least. Minimalist seasoning allowed the natural pork to stand out, which I generally prefer. The ribs were a little overcooked, though not quite falling-off-the-bone, and still juicy. Three bones were plenty, considering how much other food there was on my plate.<br />
<br />
Jo-Jo's is the kind of place where the food speaks for itself, no frills offered or needed. That's just what you want from a barbecue joint. With tax, my three-meat combo and a sweet tea only ran me $12.00! It's hard to beat that kind of a deal.<br />

I had swung through Whole Hog Cafe last week to pick up a gift card for someone, and, while waiting my turn at the counter, I had an epiphany. Somehow, in all of the times I've eaten Whole Hog, I'd never had their pork loin. This would not stand!<br />

Since I was already in West Little Rock today, I thought I might try out their location on Highway 10. But sadly, pork loin isn't a part of that branch's menu, nor the other spot on Cantrell. North Little Rock would have been the next closest location that I hadn't yet sampled, and that was a bit far out of the way. So even though the Markham Whole Hog isn't my favorite, I wanted that pork badly enough to give them a second run.<br />

I arrived right at opening time, which meant there were only two other customers between me and the counter. This location is always clean and bright on the inside, with a yummy smoke-filled aroma. Super friendly employees and some great blues music also add to the fun, welcoming atmosphere.<br />

While I've eaten the pulled chicken from Whole Hog on several occasions, I've never had their full bird either, so a half-chicken was definitely on my radar today as well. The most economical way to get my desired meats was with a half-chicken plate, plus an a la carte helping of pork loin. I picked cheesy corn and potato salad as my sides, going the safe route with one and exploring with the other.<br />

My potato salad was definitely heavy on the mayo, but that added to its flavor and its creaminess. The skin-on potatoes were finely diced, and I saw a lot of green bits that I couldn't identify by sight or by taste. I'm thinking maybe chives or parsley? Either way, there was plenty of seasoning and plenty to like about this dish. The corn, on the other hand, confused me a little. It was basically corn tossed in their macaroni cheese. Not that it was bad by any means, but my brain kept anticipating, and therefore wanting, actual pasta. I'm also not sure that the flavors meshed together as well as they had hoped.<br />

The pork lacked any real smoke ring, and it looked sort of gray and lifeless if I'm being completely honest. Looks aside, the tender pork tasted great. I couldn't pinpoint any smoke, but there was a hefty, savory spice blend on the crust. The best way that I can describe this as thin slices of a pork chop. Although I liked it in general, I wouldn't exactly call it barbecue.<br />

Nice grill marks made the hunk of poultry very appetizing. The crisp skin had a slightly sweet marinade on it, and the chicken below was very juicy, especially the dark meat. In my opinion, this was more grilled than smoked though, and it certainly tasted that way. The chicken was good in its own right, but it was not the barbecue chicken I had hoped for.<br />

I'm glad that I tried the rest of Whole Hog Cafe's offerings, but I guess I should stick to their ribs and pulled pork from now on, preferably at the Cantrell location.<br />

This weekend I needed a little "me time," and what better way to accomplish that than with some "meat time"? I set my sights on Breitweiser's down south in Benton, Arkansas. I couldn't find much info about this butcher shop, but I knew I'd find barbecue there, and that's really all the info that I needed.<br />

I arrived right around 10:45am, assuming that this kind of place would have things ready to rock by then. Sure enough, I smelled the sweet aroma of pit smoke through the morning rain. Breitweiser's is a classic small town meat market, plus they have a decent selection of deli meats and cheeses (although the latter two sadly aren't homemade). These guys also sell quite a few barbecue sauces and rubs, and beer, of course.<br />

As you might expect, Breitweiser's sells their barbecue by the pound, but they were kind enough to make me up an awesome four-meat feast of brisket, chicken, sausage, and ribs with beans and potato salad. All this plus a Coke only ran me $18.00, which wasn't bad at all. The meats came from warming pans, and were then further heated up on a flat iron griddle. There isn't really a great spot to dine in here, so I ate things out in my truck.<br />

I started lunch off with some pretty standard baked beans, likely canned. There was a slight spiciness here and there, but it didn't linger. My potato salad was a mustard-based variety. They also have mayo-based potato salad available if you're so inclined, although my options were presented as "white or yellow." Flecks of dill and intermittent pickles and pimento made this an enjoyable side dish. It wasn't nearly as mustardy as its bright yellow color suggested, and that's a good thing.<br />

The brisket had some great bark and an adequate smoke ring. I found good hits of salt and smoke in each bite. The beef was also tender and super moist, despite the leaner cut. What fat there was had been rendered down nicely and oozed flavor. The griddle added a good char as well, but I would have rather just had my brisket sliced fresh.<br />

I don't know if Breitweiser's makes their own sausage, but I would guess not. It tasted more like Eckrich to me, and considering that all of their deli meats come from this brand, that's probably a safe bet. The meat was also finely ground, with no visible fat or seasonings. There was a good sear to the sausage at least, and a very snappy casing.<br />

At first I had trouble discerning what part of the chicken I'd been served, but I'm about eighty percent sure that it was a breast. The chicken skin was nicely charred, so you can imagine my disappointment when I didn't taste much of anything beyond pit smoke. I did appreciate the smokiness, which is often lacking in barbecue chicken. It could have definitely used a good dusting of salt and pepper at a minimum though. The meat itself was cooked well and was fairly tender. Maybe dark meat would have fared better.<br />

There was a great crust on my ribs, and they were incredibly smoky. A rosy smoke ring was also instantly visible. Not much seasoning here either, but the other flavors made up for things in this instance. The pork was very juicy and quite tender. While I couldn't stand to eat more than a few bites of the chicken, I found myself wishing I had several more ribs.<br />
<br />
Needless to say, Breitweiser's was a bit of a roller coaster ride. Four-star brisket, two-star sausage, one-and-a-half-star chicken, and ribs somewhere between a three and a four. I'm not entirely sure what to do with all of that, so I'll just call this place "average" and move on.<br />

I had tried to visit Capitol Smokehouse & Grill during my previous barbecue outing, only to find them closed due to lack of heat. Winters in Little Rock due tend to be a bit on the chilly side, so I didn't mind postponing my visit until today.<br />

This place could seriously use a complete design makeover, or a fresh coat of paint at the very least. And that's coming from a guy who regularly eats at dives and shacks. Capitol Smokehouse has all of the knickknacks of a small, rural diner shoved into a relatively tiny space downtown. Well, downtown-ish anyway.<br />

Here everything comes cafeteria-style, which means that all of the meats are pulled from warming trays rather than being cut fresh to order. I initially ordered their combo plate, slated to come with brisket, pulled pork, and baby back ribs by default, along with potatoes and "meaty beans" as my sides. Except today they didn't have any brisket, and for some reason they wouldn't let me substitute their barbecue chicken for the beef. So after much deliberation, they suggested that I take a two-meat "half and half" plate of pulled pork and ribs and add on the poultry for a $3.99 upcharge. All together, my lunch was almost $20.00, which seemed a bit steep.<br />

The beans were both sweet and spicy, and nicely seasoned to boot. I didn't notice much meat in there, but at least they were tasty. My skin-on potatoes were crispy and loaded up with big hunks of onion. Although I tend to prefer my potatoes in salad form, these were a worthy and comforting side dish. The cornbread, however, was dry and crumbling at every touch.<br />

My local Kroger generally sells chicken quarters for around $1.99 per pound, so for more than double that price I was expecting to be blown away. The skin was crispy and seasoned well, and the dark meat was juicy enough. There wasn't any discernible smokiness, but there was at least a good char from the pit. Something slightly sugary in the rub was also a welcome flavor contrast.<br />
<br />
While most of the food at Capitol Smokehouse came from visible warming trays, my pulled pork came from a plastic baggie. It was sort of dry, though astonishingly tender. There was just a touch of smoke, and otherwise it was fairly bland. I didn't find any real bark to speak of, at least not in my portion.<br />

I couldn't see where they pulled my ribs from, but it sure wasn't the pit. Their soggy crust suggested that they too had been "warming" for quite some time. The crust did showcase a surprisingly savory blend of spices, but there was only a hint of smoke, and it faded quickly. At least the meat was cooked well, it just needed to be served a lot fresher.<br />

The ladies running Capitol Smokehouse & Grill were some of the friendliest you're likely to find anywhere, but sadly that only does so much to make up for mediocrity, especially considering the price tag. Even though I really wanted to give this place a higher rating, they don't deserve it.<br />

My first choice for lunchtime barbecue was unexpectedly closed today. Apparently their heat went out, and since it was all of 19 degrees overnight, they felt like this might be problematic. Good call. I made a snap decision to check out Hawgz Blues Cafe in North Little Rock instead.<br />

Best I can tell, this joint opened sometime in Spring 2017 or so. There was a surprisingly limited interior dining space, which is odd given the enormity of the building itself. A large group of customers had most of the tables gobbled up when we arrived, so maybe there's really more seating than it seemed. High ceilings and large open spaces made the room feel even more empty. It has kind of an old Nola house feel to it, and I assume that's what they were going for. Food aside, this is surely a great spot for live music and evening cocktails. Their big outdoor patio looked like it gets rocking quite often, at least in warmer weather. The bar area I saw probably has plenty of traffic as well.<br />

Hawgz Blues offers a Southern Smoked Dinner with either brisket or pulled pork, but I was bold enough to request both. This combo automatically comes with baked beans and potato salad. Good enough for me. For the little guy that I had in tow, I ordered the kid's chicken tenders with mac and cheese instead of the standard french fries. All requests were happily accommodated.<br />

I ended up with a side of unexpected coleslaw, too. There were nice hits of mustard and crunchy cabbage in each bite. I'm no fan of slaw in general, but this was almost enough to change my mind. The beans were pleasantly seasoned and had some sizeable hunks of meat throughout. Although their potato salad wasn't quite mashed, it was close. The creamy mayo base had plenty of veggies mixed in for texture. Each side had merit, and I was happy to have them all.<br />
<br />
The brisket was sliced thin but still had evidence of bark and a rosy smoke ring, though the thin slicing didn't offer too much of either. The thinness did help keep things tender at least. A moderate smokiness was the most I could find. Their sauce added both acidity and a sweetness, but wasn't overpowering at all. It was actually a nice combination of natural and added flavors.<br />
<br />
My pulled pork was even better. Big chunks of tender pork were a welcome change of pace from the stuff that's chopped into oblivion. I found it much smokier than the brisket, but I wished for more bark. Hawgz Blues uses a different sauce on the pork, and it had some definite heat to it. The spiciness lingered on my lips and tongue, as did the smoke.<br />
<br />
Although chicken tenders and macaroni aren't exactly a gourmet meal, my son seemed to enjoy them both. That may not seem like a ringing endorsement, but he has a pretty discerning palate for a one-year-old. Take that as you will.<br />
<br />
I like to read reviews from other customers both before and after trying out a new barbecue joint, mostly to see how my personal experience measures up. Yelp in particular has a fair amount of negative reviews for Hawgz Blues, criticizing both the food and the service. Honestly, I found neither one lacking all that much. I've already given my two cents on the food. As for service, every employee I saw was hustling hard, and two others besides my waiter checked to make sure that everything was ok at various points during the meal. I appreciate that kind of work ethic. Perhaps there were just some growing pains early on, but whatever the case may be, Hawgz Blues Cafe seems to have things under control now.<br />

The faux log walls at Smoke Shack were reminiscent of an old-timey cabin, which is what I assume they were going for. Most of the decor is just old license plates scattered about, but the place was also decorated for Christmas this time of year. Don't let the small primary dining room fool you: there's a larger room in the back, as well as an outdoor patio. Maumelle tends to be a little short on restaurants, especially non-chain restaurants, so I bet Smoke Shack gets packed frequently.<br />

I grabbed a brisket dinner plate with potato salad and tomato relish, plus a half-rack of pork ribs to round things out. I also ordered a quarter-pound of smoked turkey for my son, who is pretty much obligated to share with Daddy. A half-pound was the minimum that they would sell me, so leftovers were sure to be plentiful.<br />

Smoke Shack's chunky potato salad was full of veggies and definitely full of mustard. Normally I'm a huge fan of potato salad, but this one wasn't really my style. The tomato relish, on the other hand, was superb. Big hunks of green tomato were bursting with sugar and spice, plus a tart acidity for balance. I had initially considered pinto beans as my second side dish, but I'm really glad that I went with the tomatoes instead.<br />
<br />
This was sort of an odd presentation for brisket, particularly the half-bun accompaniment. I was also a little saddened by the mass of sauce-covered chopped beef rather than the Texas-style slices that I've grown so fond of over the years. The tender brisket was piping hot, a good sign. There was plenty of bark and plenty of smoke, which shone through nicely despite all of the sauce. I couldn't find a visible smoke ring, but I'm sure that it was there somewhere.<br />
<br />
The pork spare ribs looked absolutely gorgeous. Their rosy black crust glistened with delicious grease and pork juice, beckoning me to dive right in. These guys were seasoned just right and had a great smokiness. The meat came off easily with a slight tug, none of this falling-off-the-bone nonsense. As expected, each bite was spectacularly juicy. A half-rack wasn't nearly enough.<br />
<br />
My son's turkey came out deli sliced, rather than the thick pieces I had envisioned. Nonetheless, it was very juicy and well-smoked. The seasoning around the edges was even tastier. We both enjoyed it thoroughly, even though his less-than-dexterous fingers dropped half of it on the floor.<br />
<br />
What the brisket lacked the ribs made up for in spades, and the turkey was no slouch either. Smoke Shack Bar-B-Q will definitely become part of our regular rotation.<br />

You'll find H.B.'s in a converted house smack dab in the middle of a residential neighborhood, where it's lived for over fifty years. The neighborhood is a bit sketchy, but there were quite a few signs inside and out which suggest that the owners and employees are all packing heat here. This place looked super old, from the wood-paneled walls to the country cow decor. Most of what I could see was also fairly dusty and grimy, especially the dish sink right behind their register. Frankly, I'm surprised that this joint passes health inspections.<br />

There's only a small dining room, packed tight with a dozen or so tables
and chairs. To-go orders would be more advisable here, so that's what I
did today. Even then it took forever to order, and I was only third in line. By this point my one-year-old was as visibly exasperated as the overworked cashier/waitress/owner (I think). So I made a snap decision to forgo any questions or any attempt at a multi-meat combo. Instead, I simplified things down to a pork and beef sandwich duo with a side of potato salad. If I'm being completely honest, neither of these sandwiches looked particularly appetizing.<br />

The potato salad was bright yellow, though less mustardy than I imagined. Pimentos didn't add much in either the flavor or the texture departments. It was creamy and tasty, but not my favorite. <br />

I started the main course with the brisket sandwich, or at least the one that I thought was brisket. There was actually some nice charred bark mixed into the mass of chopped beef, with a nice crunch from the slaw as well. I found just a mild smokiness, but it was there nonetheless. The meat was also quite tender, although in its chopped form it would be hard not to be. The sandwich was only slightly sweet, less so than I expected given the heavy dose of sauce, which also happened to be somewhat spicy.<br />
<br />
My pork sandwich came topped with slaw as well. The meat was juicy and tender, but chopped into oblivion and somewhat less seasoned than its beef counterpart. There was plenty of rosy bark beneath the surface at least. The sauce was poured on a little heavier here, such that that's pretty much all I could taste without really concentrating and focusing my tastebuds.<br />
<br />
In retrospect, the sandwiches likely would have been much better without sauce, a request that I should have taken the time to make.<br />

Six weeks is far too long to go without a barbecue outing. I wanted a place where my son and I could eat outdoors and enjoy some of the last remaining fall weather that Arkansas had to offer before things get cold. So we headed across the river to North Little Rock to check out Mick's Bar-B-Q.<br />

Mick's is quite the literal barbecue shack, with nothing more than a walk-up window, a drive-thru window, and four picnic tables under an awning. Luckily for us, that's all that we needed today. I ordered a combo of ribs and pulled pork, plus potato salad and bbq beans on the side. A three-meat combo would have been more ideal, but I take what I can get.<br />

The beans were sweet and somewhat spicy, with a nice mix of flavors. They were also cooked well, not mushy at all. A dusting of paprika on top of the potato salad added to the visual appeal, but there wasn't enough of it to enhance the flavors any. The mayo base stood out here, and I liked the medium-dice on the potatoes.<br />

I took my pulled pork without sauce, and honestly, it was a little dry. There was a pleasant smokiness and a good amount of seasoned bark at least. I ended up sampling their mild barbecue sauce out of necessity. It was thick and sort of ketchupy, so much so that the pork wasn't really any better with it than without.<br />
<br />
The ribs came apart with the slightest nudge, and while some people naively prefer theirs to be "falling off the bone," it's suggestive of overcooked meat. There was a very mild smoke level here, and the crust was barely seasoned. On the other hand, the meat was very tender and super juicy throughout, so I suppose that's something to be thankful for.<br />
<br />
I had high hopes for Mick's Bar-B-Q, which has great ratings across the Internet. Either somebody knows something that I don't, or standards for barbecue in North Little Rock are a bit low.<br />

I was making great time blowing through the backroads of East Texas, where it seems like the majority of barbecue joints are closed on Mondays for some odd reason, so I just kept going until I hit Naaman's BBQ in Texarkana.<br />

You'll find Naaman's in what was obviously an old filling station. They've worked hard to maintain that general vibe throughout, including tin walls, intentionally-peeled paint, and the trashcan housed inside a rusted-out car. All in all, the atmosphere was perfect for taking a nice lunch break from my long drive.<br />

I was still in Texas by a matter of ten or fifteen yards, so I skipped the pulled pork and snagged one last Texas Trinity before crossing over into Arkansas. At Naaman's, you have to order a 3/4lb plate to get three meats, and I was happy to indulge. I took mine with brisket, pork ribs, and sausage, plus some potato salad and cheesy corn on the side.<br />

The potato salad was dominated by mustard, but something spicy caught my attention almost immediately as well. The heat faded pretty quickly, so I'm not sure what it was, but it was definitely interesting. The cheesy corn probably contained more rice than corn, although the diced peppers were a nice addition. It was loaded with cheese, that's for sure, and it made for a nice, comforting side dish.<br />
<br />
Fatty brisket is the only way to go, and they were more than willing to accommodate my request. The fat-filled crust was burgundy, bordering on black, and it was ever so tasty. Each slice had a visible, rosy smoke ring which was matched by an excellent smoky flavor. The brisket was tender and very juicy, and it fell apart with ease. I wasn't about to try barbecue sauce with this magnificent beef, and it by no means needed any.<br />
<br />
My pork ribs also had a deep red crust and a pink smoky hue beneath. There was a moderate, yet enjoyable, smoke flavor. The meat came off with minimal effort, bordering on falling-off-the-bone, but the crust wasn't quite as crisp as I had hoped for. That said, I did enjoy their simple rub, which tasted like salt, pepper, and very little else.<br />
<br />
Naaman's makes their sausage in house, and it shows. There was plenty of black pepper to go around, as well as the coarse-ground meat that makes homemade sausage so spectacular. I found a great snappy casing and lots of juice in the links. The sausage was slightly spicy and seasoned well. Normally I don't go for barbecue sauce, especially not with sausage, but my waitress insisted that I try their sausage and mustard sauce together. I have to say, it was excellent. The sauce added some heat and vinegar, plus a mild sweetness on the back end.<br />
<br />
My lunch at Naaman's was just the pitstop I needed to make it the rest of the way back home.<br />

Back when I called DFW my primary barbecue hunting ground, there wasn't much of anything resembling barbecue in Dallas' Lakewood neighborhood. Certainly nothing worthwhile anyway. Lakewood Smokehouse opened up shop at the beginning of 2016, a smoke-filled oasis in a culinary desert. I was swinging through The Big D on my way south, and I couldn't resist a pit stop to check out Lakewood.<br />

This place has reclaimed wood out the wazoo, paired with some contemporary furniture and industrial lighting. I dig it. There is also a nice bar area, with a Smokehouse Mary being the drink specialty. Think Bloody Mary with a pork rib in place of cocktail shrimp. I had another four hours on the road ahead of me, otherwise I might have indulged. Lakewood definitely smells like a smokehouse. They weren't busy at all at 11:30am on a Saturday, but I was sure that would change shortly.<br />

I ordered up a two-meat plate of sliced brisket and poblano cheddar sausage, taking ranch potato salad and their six-cheese mac and cheese as my side dishes. Lakewood had giant beef ribs on special today, and if you think I had sufficient willpower to resist snagging one of those as well, then you clearly don't know me well enough. My order ended up being sort of a beef-centric version of the Texas Trinity.<br />

The macaroni, as advertised, was certainly packed full of gooey cheese. Large spiral noodles were a nice choice here, since they offered plenty of nooks and crannies for the cheese to hide out. It was definitely comfort food. Chunky, skin-on potatoes made for a great potato salad, and of course bacon makes everything even better. I loved the ranch dressing mixed in, which really jazzed things up.<br />
<br />
My helping of brisket was spectacular. The crust was black as night, complete with a pleasantly salty rub and rosy red smoke ring beneath. All of the fat was completely rendered down, making the brisket melt-in-your-mouth tender. Each bite was also super smoky.<br />
<br />
The sausage was nice and spicy, but not overly so, with just enough cheese to temper the heat. I found a great snap to the casings, as well as lots of black pepper scattered throughout. I was told that Lakewood makes their sausage in-house, and the coarse grind on the meat was a good indication of such.<br />
<br />
I saved the best, or at least the biggest, for last. The massive beef rib was covered in a glorious fatty crust. There was more meat on the bone than I expected, and it was moist as could be, even considering the size of the thing. A moderate smoke level was just enough to be interesting without masking the natural beef flavors. Needless to say, this really hit the spot.<br />
<br />
There are many tried and true barbecue joints in Dallas where I could have stopped for lunch, but I'm glad that I gave Lakewood Smokehouse a shot. With food like this, they're certain to do well here.<br />
